Hey there! Looking for a fun Spring treat to make with your kiddos? These Spring Cookie Puzzles are such a fun project! Perfect for Easter too!
You all know I have a major sweet tooth…and I sure love sugar cookies. This is a super cute way to make sugar cookies that can be given as a gift too. Kids can help prepare the cookies and will enjoy putting the pieces together after the cookies are baked. Or make these as a surprise treat for when kids get home from school…
Start with sugar cookie dough. I made my first batch with my favorite soft sugar cookie dough…lesson learned. A dough that produces soft sugar cookies just puffs up and does not resemble the desired shape. Use a dough that makes a crisper cookie and add a little extra flour when rolling it out.
Roll out the dough to approximately 1/4 in thickness. I recommend rolling out on a sheet of parchment paper…another lesson learned. Cut into a rectangle.
Gently press a cookie cutter into the center of the dough. Do not press all the way through. You just want a faint impression. Gently press lines all the way around the center shape, being careful to just leave an impression on the top of the dough. If desired, add some colored sprinkles to dough at this time.
Carefully slide parchment paper onto a cookie sheet (or already have the cookie sheet under the paper when rolling out dough) and place in the freezer for about 20 minutes.
Remove Cookie Puzzle from the freezer and place in oven. Bake according to recipe, but watch carefully. You do not want to over-bake.
After Cookie Puzzle has baked, removed from oven and immediately cut along lines. The cookie may have expanded slightly, so middle shape may not be exact. It will be close, though!
Serve with extra sprinkles and Enjoy!
