Weekly Menu {July 15-21}

Hello Friends!

Hope you all had a fantastic weekend.  We had a busy busy, but super-fun weekend!  We had a cousins sleepover and went to the carnival.  My parents came over for dinner and the boys swam their little hearts out.  On a golf cart ride around our land, we discovered wild blackberries and the boys LOVED them!  Then, we found our first egg in the chicken coop!

Now on to another Hot, but exciting week at our house…I’m trying to pack in as many activities as I can with school starting in just a month from today!

It’s still  HOT around here and our menu reflects that again…Mr. Kriegerchick smoked a bunch of chicken Sunday, so I will be using it in a couple recipes this week.  Also, our freezer is way too full (I can’t find anything!)…I’m trying to use up some of our meat in this weeks menu.

Monday: Homemade chicken salad sandwiches with fresh fruit and veggies

Tuesday:  Pork Tacos with chips and homemade guacomole

Wednesday: Buffalo Chicken Wraps with veggies and homemade ranch dip {We didn’t end up having this last week.}

Thursday:  Grilled Pork Chops, wild rice and baked Zucchini Chips {in the toaster oven}

Friday:  Grilled Pizza {Family night: choose your own toppings! I’ve been wanting to try grilling pizza, so tonight’s the night!}

Saturday: This Lucky Momma will be scrapbooking the day away at a scrapbook retreat and they feed us…Yum!

Sunday: Project day for Mr. Kriegerchick and I {no kiddos!}…no time to cook!  I have a looong list to accomplish with my handyman. We have a poolhouse to finish!

{As always, if there is a recipe you would like, please let me know!  Many of these I just prepare the way we like them.}

      I’ll post the zucchini chips and give you the recipe when we scrapbook. The Buffalo chicken wraps did not turn out as good as we expected. :( I’ll let you know when I try another version.

    I would love to know how you make your chicken salad. I never make it, but it is something I have come to enjoy!
    Also, grilling,pizza is the BEST! It is a lot of fun too! :)

      I just make up my chicken salad based on what I have to add to it…My favorite is with celery, red grapes or craisins and pecans. Blake doesn’t like fruit in his, so I make it with green onions, celery and chopped peppers. Add mayo, a little dijon mustard and some celery seeds. I’ll see if I can put together a more exact recipe.
