Need a recipe that is easy, delicious, and guilt-free?
These Pumpkin Spice Bars are all three!
Let me explain…They are made with 2 ingredients, take about 25 minutes and are only 1 point on Weight Watchers**!
I was introduced to these Pumpkin Spice Bars a few years back by my student teacher and have been making them ever since. I love them. My kids love them. Everyone I share the recipe with loves them. You will love them too. Trust me!
Pumpkin Spice Bars
Ingredients:
1 can pumpkin (15 oz.)
1 box Spice cake mix
(Generic brands work perfectly!)
How To:
Mix both ingredients together with an electric mixer just until combined. Spread as evenly as possible into a greased 9×13 baking dish. Batter is very thick. Bake at 350 for 20-25 minutes or until toothpick inserted into the center comes out clean. Allow to cool. If desired, sprinkle with a dusting of powdered sugar. Cut into bars and Enjoy!
Note: Cut bars into size of choice. I have never been on Weight Watchers and do not count points. I was given this recipe from a friend who was on Weight Watchers and said an approximately 2×4 in. piece was 1 point. If you calculate it differently, please cut the bars accordingly. The powdered sugar is not factored into the 1 point.

How many portions does it make?
Good question…I was never given an exact amount. I typically cut them into approximately 2 x 2 or 2 x 4in bars. The larger size is only 1 point!

They’re one point, but 1 of how many bars in a pan? 9, 12?
I was given this recipe from a friend who served very large portions. You can easily have 12 servings in a 9 x 13 pan, about 2 x 4in. in size. I typically cut mine in approximately 2 in squares…so I can eat more!

How did you figure 1 point when I figured it.. It was 5pts if you cut 12 (example) is have to cut 24 just to make it 2pt
